    Me and sweet potato have our ups and downs..we are on the outs right now and arent speaking. After the kinds of stupid preps I had before, lets just say I got a bit burnt out on sweet potato..AND chicken. But chicken and I have recently made ammends and I am finding myself toying with the idea of bringing sweet potato back into my life. :love: Hahaha

    OOoOOo I havent tried this yet, but a friend emailed me one this morning that looked sooo good...

    Maple-Pecan High Protein Body Builder Muffins
    (can leave out the nuts if you are allergic)

    Makes 3 Big Muffins

    (approx 180 calories, 17g protein, 20 complex carbs, 3g unsaturated fat per muffin)

    Ingredients

    • 3/4 cup Oatmeal
    • 1/4 cup of Oat Bran
    • 1 tbsp of Whole Wheat Flour
    • 6 Egg Whites
    • 125g of non fat Cottage Cheese
    • 1/4 teaspoon of Baking Soda
    • 1 teaspoon of Splenda (for no sugar diets) or raw organic sugar
    • 1/4 cup of Crushed Pecan
    • 2 tbsp of Low-Cal Maple Syrup
    • 1 teaspoon of Maple Extracts
    • 1 teaspoon of Vanilla Extracts

    Directions

    1. In a blender, mix all the ingredients (except for crushed pecan). Blend until the
    mix gets thick.

    2. Add the crushed pecan to the mix and stir (with a
    spoon or a spatula)

    3. Poor the mix in a muffin cooking pan, and cook at 350
    degrees F. until cooked (About 30 minutes).



    I LOVE pecans. And aha, Eggwhites!

    Here is Cathie H's loaf recipe

    you can modify to fit any kind of loaf. She used her other eggwhites to make a 'quiche'

    Cathie's H's Mini Oat loaf..

    40g ground oats (magic bullet)
    2tsp sweetner
    1 tsp cinn
    1/2 tsp pumpkin spice
    1/4 tsp baking powder
    1 egg white
    1/4c h20
    canned pumpkin (NOT pie stuff) (Sub blue berry amt)

    Mix wet, mix dry, mix and bake in a mini loaf pan sprayed with Pam,
    at 350deg for 25-30 min.
    (her note was less if not using fruit)
    once can use extracts if need be in that case.

    Thank you soooo much for this thread!!! I need some new ideas!! I agree with the simple egg whites and hot sauce! Quick, easy and yummy!

    Creativly CRUNCHY EW Pizza

    Posted this in my journal - but sharing it here as well.

    I did it! I made a perfectly crunchy the whole way through egg white pizza! :yahoo:

    FYI - I started my very first part time job when I was 15 - Rosati's Pizza. I worked there (even through starting my FT job at 17) until I was 21. Albeit, I rarely ever made the pizzas myself, I did observe pizzas being made for 6 years - so that probably explains why I was so hell bent on getting this right :lol:

    Ok, so lets dive right in!

    Oven set to broil, baking pan set aside, 10" non-stick skillet heating on stove top at elec. temp. setting #4.

    4 EWs in a dish

    ***Do NOT blend/beat ew's

    Add seasoning generously - fold seasoning in, but do not beat. What I used is pictured below.

    Add to skillet and let ew's cook through as you would an omlet.

    Flip; cook other side through.

    It should look like this.

    Remove from skillet and place onto baking sheet.

    Spray top side with spray butter (pam may work here as well)

    Broil

    ***Broiling time may vary depending on how close your rack is to heat. Watch closely.

    When top and edges are crispy (perhaps even a little burnt), take out, flip, spray, and put back under broiler.

    When other side is done, remove from broiler.

    Set oven to Bake at 425

    ***I like my veggies slightly cooked, so while my crust was broiling, I sauteed my mushrooms and green peppers in the skillet I used to cook ew's

    Cover crust (crispiest side up) with desired pizza sauce (starting from center, moving outward) almost to the edges.

    My Pizza Sauce
    (tonight, I was feeling spicy)
    2 tbs Salsa
    1 tbs dijon mustard
    1/2 tbs splenda
    Generous amount of seasoning

    Add desired veggies.

    ***Make sure veggies are not soggy (suvh as cooked spinach, tomato seeds, etc.)

    Bake in Oven for 10-15 minutes, or until desired done.ness
    (I went for 15 minutes, then turned off oven, but let pizza remain inside for an additional 5 min - so 20 min total)

    Slice & Serve! :cheat:

    ^^^When I cut through the pizza with the pizza cutter, it crunched and crackled just like a real pizza, and the slices seperated so cleanly.

    This was the best one yet by a long shot. The crust seasoning and sauce seasoning were dead on to my liking - seriously tasted like an effing PIZZA!

    Now Im off to experiment with a new way of making my Chocolate Peanut Butter Protein Brownie with Peanut Butter Frosting. Wish me luck!

    Nice! you had fun with this one :D

    I found that not whipping them was best too. that is how i always do my eggs.

    Im pretty lazy and wont go through all those steps and time for the oven/baking.However it comes out of the pan/skillet is how its going to be :lol:

    Sweet Eggwhites:
    If ya'll havent tried sweet eggs, they are good too. Much to my surprise as I dont traditionally go for sweet. In the evening might satisfy a sweet tooth if you arent in the mood for pro ice cream, yogurt or pro brownie..

    into a hot skillet, sprayed wtih Pam, pour UNwhipped egg white. cook on both sides.. I like it a bit crispy.
    sprinkle with stevia in the raw and some cinnamin.
    Cut into slices and enjoy.

    Ileen, those are yummy too!! I some times eat that as dessert!! Its pretty tasty thoughnsome people have a hard time wrapping their head around sweet eggs and not savoury

    I have a feeling that once I get my plan from Erik and I have to get used to the new routine and things busy up a bit that I wont be so extravagant in my cooking methods. But youre right, I did have lots of fun!

    Sweet eggs are soooo yummy! My friend taught me how to make what she called 'phillipino' scrambled eggs when we were 8 - sugar (swapped for splenda), vanilla, scramble and NOM :cheat:

    MmmM, I woke up one hungry hippo this a.m. :piggie:, I think Im going to stove top slow cook my oats and have some sweet eggs

    When my M1 called for Oats, egg whites and 1 serving of fruit I subbed pumpkin for that serving of fruit and made pumpkin pie oatmeal - uber delish!

    40g Oats
    6 egg whites
    1 serving of pumpkin fruit - I think it was 3/4 cup but dont quote me, its been a while
    1tbsp sfff carmel syrup
    splenda to taste
    dash of pumpkin spice or pumpkin spice capella drop
    dash of cinnamon
    1/4 tsp of baking soda


    I basically ate a pumpkin pie daily - miss those days :):popcorn:

    Skillet only, 'pizza'

    All in one pan/stove top. It was definitely crispy. :D

    I'd left it sit on the burner in the pan, while prepping my oatbran cereal UNcovered. Trick on stove top is never completely cover it or it will get soft even if it was crispy at one pt.

    Today i diced the spinach and that worked even better for 'melting' it.

    I'd already eaten one piece when i decided to take a picture. I the skillet i used was about as big as the plate/the largest one I own.. BIG.. shrinks a wee bit. This was 5EW this meal.
