Me and sweet potato have our ups and downs..we are on the outs right now and arent speaking. After the kinds of stupid preps I had before, lets just say I got a bit burnt out on sweet potato..AND chicken. But chicken and I have recently made ammends and I am finding myself toying with the idea of bringing sweet potato back into my life. :love: Hahaha OOoOOo I havent tried this yet, but a friend emailed me one this morning that looked sooo good... Maple-Pecan High Protein Body Builder Muffins (can leave out the nuts if you are allergic) Makes 3 Big Muffins (approx 180 calories, 17g protein, 20 complex carbs, 3g unsaturated fat per muffin) Ingredients • 3/4 cup Oatmeal • 1/4 cup of Oat Bran • 1 tbsp of Whole Wheat Flour • 6 Egg Whites • 125g of non fat Cottage Cheese • 1/4 teaspoon of Baking Soda • 1 teaspoon of Splenda (for no sugar diets) or raw organic sugar • 1/4 cup of Crushed Pecan • 2 tbsp of Low-Cal Maple Syrup • 1 teaspoon of Maple Extracts • 1 teaspoon of Vanilla Extracts Directions 1. In a blender, mix all the ingredients (except for crushed pecan). Blend until the mix gets thick. 2. Add the crushed pecan to the mix and stir (with a spoon or a spatula) 3. Poor the mix in a muffin cooking pan, and cook at 350 degrees F. until cooked (About 30 minutes). I LOVE pecans. And aha, Eggwhites!
