    COTTAGE CHEESE SALAD DRESSING

    1/2 c. plain yogurt
    1/4 c. chopped parsley
    1 tbsp. prepared mustard
    2 cloves garlic, crushed
    Dash pepper
    1/2 c. cottage cheese
    3 tbsp. vinegar
4 tsp. Splenda or Stevia (I'm not sure if this is really necessary)
    1 1/2 tsp. salt

In a small bowl, combine yogurt, cheese, parsley, vinegar, mustard, sugar substitute, garlic, salt and pepper, mixing well. Refrigerate, covered until ready to use. This is delicious on crisp salad greens.

    Aggies,

Do you kind of cream the cottage cheese before mixing it all together so it is smooth?

Yup, cream the cottage cheese in the blender, unless you can find Friendship 1% whipped cottage cheese. I love that stuff, but it's made on the East Coast. When I lived in San Diego, I could buy it at Whole Foods, but I can't find it in the Sacramento area. :(
