I LOVE the protein muffin recipe:
    5 egg whites
    1/4 c cottage cheese
    3/4 c oats
    DaVinci's flavoring of choice
    a bit of cinnamon
Blend and bake at 375 until done...these are AWESOME!

Does heating the CC with the oats help to melt the clumps? Can you really stir it until they're gone? I'm a blended CC type myself, can't stand the curds.

Yup. Follow the recipe I posted on the other page, no clumps. I use Friendship 1% no salt added cottage cheese.

The above protein pancake (with the cc) is also really yummy if you add 1/4 cup of (canned/fresh) pumpkin and some cinnamon.

i make that protein pancake without any cottage cheese at all.

I whip the eggwhites with my stick blender(can use a hand blender) till nice and fluffy. Stir in desired oats, Cinn, splenda if desired. STIR all together and cook in a heated skillet sprayed with Pam.

If you can spare the calories add: blueberries or walnuts :)

My fave...1/3 cup oats, 2/3 cup water in the microwave for half a minute or so. Dice up a tart apple and stir in with cinnamon, nutmeg, and splenda...I add raisins too, then cook for two or three minutes more, until the apples are soft.

    I know you'll love it.

Last night I added Da Vinci caramel syrup when it was all done, and that was great too...

Another one...oats and water (1:2 ratio) with cocoa, CHUNKY peanut butter, raisins (okay, so I LIKE raisins), and splenda...nuked for a minute and a half or so...then a splash of vanilla when it's all done.

I love my oats with a scoop of protien powder (choc or vanilla or PB or strawberry) and some frozen berries. SO GOOD!

My diet has changed and now I get 1tbsp of natural pb with my oats and splenda. Not as tasty as with the pp, but pretty good in all!!

    These are good. :)

    Oatmeal drops.

    3 c oatmeal

    1 c whole wheat flour

    1 c protein powder

    1 tsp baking soda

    1/4 tsp nutmeg

1/2 tsp cinnamon (I used more- a heaping tsp)

1/2 tsp sea salt (I added, wasn't in original recipe)

1/2 c unsalted, raw sunflower seeds

    1 c unsweetened applesauce

1/2 cup brown sugar (I used only 2 TBS)

    1 tsp vanilla

    2/3 c raisins (I used 1/2 c)

1/8 tsp powdered Stevia (I added)

Preheat oven to 275. Combine the first seven dry ingredients in a large mixing bowl. Combine applesauce, brown sugar and vanilla (and stevia) in a small bowl and add to dry ingredients. Add raisins and mix well. If mixture is still dry, add 1/4 c more applesauce (never had to do this). Roll into small balls (I plopped a TBS and that was it) Place on cookie sheet. Gently flatten with a fork (again I just plopped), Bake in oven 20-25 minutes. (I baked 18 mins).
